    Let the Baking Begin!

    Tonight I will bake my first dessert of the holiday season. Easy Cheesecake!

    Well, I wouldn't actually call it baking. But it's a rockin' recipe I got from Kristen Self (she does the voice of the computer in the Spirit Blade Trilogy and the weekly podcast) that's really easy to make and extremely yummy:

    With an egg beater, mix/whip 16 oz. Cream Cheese (not the whipped kind) with an 8 oz tub of Cool Whip and 1/3rd cup of sugar. Put it in a pre-made graham cracker pie crust and refrigerate. Top with your favorite pie filling. (Mine is strawberry!)

    See? Frickin' easy-peasy! Cheesecake fans rejoice!

    And in December, muffins and chocolate peanut clusters...

    oooh! That reminds me! I never did try the cookie recipe from the Larfleeze Green Lantern Christmas Special last year! Better go dig it out now before I forget!!

    I had a similar take on that recipe... basically you slice a banana and mix that into the cream cheese... and then top with the strawberry filling... walla! Strawberry Banana Pie 8D

    That recipie sounds like it could be easily modified with fat-free/low-fat varieties of the ingredients (for those of us actaully trying to lose weight). And I wonder if a small 6 oz container of yogurt could be added. Gonna have to try it for the wife. I think we've made a similar one before. She'd know more than me. Smile

    Yep! Absolutely! Depending on my mood I'll use low fat versions, though I've found something is missing if you go all the way to fat free on the whip cream.
